Chickpeas with banana

 

For 2 people – easy ~ €

Preparation time: 10 minutes

Cooking time: 20 minutes

Ingredients:

  • 1 small onion
  • 1 carrot
  • ½ Tbsp of chopped fresh ginger
  • 100 g drained chickpeas
  • 1 Tbsp of tomato purée
  • ½ tsp curry
  • A pinch of turmeric (optional)
  • 2.5 dl of water
  • ½ dl of coconut milk
  • 1 banana
  • Salt & pepper
  • Oil

Accompaniment: pasta or rice.

Cut the onion and fry in olive oil until it is translucent. Peel and cut the ginger into small pieces. Grate the carrot and add it, with the ginger, to the onion. Add chickpeas, tomato purée, water, curry and turmeric. Salt and pepper.

Cook under a lid for 10 minutes. Add the sliced banana and the coconut milk. Cook for another 5 minutes.
