Gingerbread cake


For 4 people – Easy ~ €

Cooking time: 25 minutes


  • 200 g wheat flour
  • 80 g of sugar
  • 80 g of deodorized coconut oil
  • 40 g of raisins
  • 5 g fresh ginger
  • 2 tsp cinnamon powder
  • 2 tsp chia seed
  • 60 g of soy milk
  • 160 g of okara (homemade milk residue, replaceable with 50 g of vegetable milk)
  • 2 tsp of bicarbonate
  • 2 tsp of pressed lemon juice (replaceable with 1 tsp of wine or cider vinegar)

Preheat the oven to 190° and place a bowl containing the coconut oil so that it becomes liquid.

Start by soaking the chia seeds in the milk.
Peel the fresh ginger and cut into small pieces.

Combine flour, sugar and the okara. Add the bicarbonate and pour the lemon juice over the bicarbonate to cause the chemical reaction (it replaces the yeast).

Add the coconut oil, the mixture of chia seeds and milk. Mix well. Add cinnamon, ginger and the raisins.

Put it in a baking pan for about 20 to 25 minutes (until the middle of the cake is cooked).
