Preparation time: 10 minutes
Ingredients to prepare one glass:
- 1 dl of coffee
- 2 tsp of unrefined sugar or brown sugar
- 2 tsp of Irish whiskey (Cheap whiskeys lends itself well such as Paddy or O’Hara)
Chantilly for about 5-6 glasses:
- 1 can of 400 ml coconut milk
- 3 tsp of vanilla sugar
To prepare the whipped cream:
Refrigerate the can of coconut milk for 8 hours or overnight.
Open the can of coconut milk while making sure not to shake it, carefully remove the thick layer of coconut cream which will be at the top of the can. Put it into a bowl.
Keep the coconut water, at the bottom of the can, for another use (you can simply drink it, add it to a smoothie or cook a recipe with it).
Whip the coconut cream at medium speed to start (in order not to get it everywhere). Then go to maximum speed and whip until you get soft peaks, as you would normally do with a classic whipped cream. This takes about 7 to 8 minutes. Add the vanilla sugar and whip for another minute.
Prepare the coffee in a glass (we used a 19cl balloon glass) and add the sugar and the whiskey – mix it thoroughly. Gradually add 3 tablespoons of whipped cream in each glass.
