3 mexican inspirations (Wrap/Bolo/Dish)

 

For 4 people – easy ~ €

Preparation time: 15 minutes

Cooking time in pan: 20 minutes

Baking time in oven: about 5 minutes (for the dish)

Ingredients:

  • 100 g of corn
  • 100 g of red beans (drained) (40 g dry beans)
  • Corn chips (Doritos)
  • Grated Vegan cheese

Sauce:

  • ¼ leek (green or white part)
  • 1 carrot
  • ⅓ zucchini (150 g)
  • ¼ of an eggplant (100 g)
    • In winter, you can replace the zucchini and the eggplant with 250 g of winter vegetables such as broccoli stump, beetroot, sweet potato, celery root, celery branch, or the hard part of kale or spinach.
      To sum it up, this is a perfect zero-waste recipe to finish what leftovers you have in the fridge!
  • 1 can of 400 g crushed tomatoes or 400 g of tomatoes
  • 2 dl boiling water
  • 1 tbsp of ketchup
  • 1  big clove of garlic
  • 2 tsp of cornstarch
  • 2 tbsp of water
  • ½ tsp of paprika powder
  • 1 pinch of Cayenne pepper
  • Salt & pepper
  • Optional: 150 g of seitan

Accompaniment: wholegrain pasta.

Cut the leek finely and grate the other vegetables. Put them in a saucepan with the tomato jar and water. Cook for 15 minutes.

Mix the cornstarch with the water and add to the mixture. Continue to cook for a few minutes to thicken. Add spices, salt, pepper and ketchup.

This is also the time to add in the seitan if you choose to have some.

For two people, use half the sauce in a dish of 18x25cm, add the corn, the red beans, the corn chips and finish with a layer of grated Vegan cheese.

Place the dish in a preheated oven at 200°C until the Vegan cheese is melted, for about 5 minutes.

Variation: Wraps or Tacos

Serve the hot sauce in a bowl. Choose a few toppings according to what you have at home: corn, red beans, diced fresh tomato, green salad, sprouts or taco sauce. It is also possible to fry an onion in strips and/or ½ pepper in strips to vary.

Variation: vegan Bolognese

If there is sauce left, it is also possible to eat it in the form of vegan Bolognese with spaghetti!
