Marinated zucchini pepper tofu


For 2 people – Easy ~ €

Marinade: 2 hours

Preparation time: 10 minutes

Cooking time: 20 minutes


  • 2 zucchini
  • ½ smoked tofu
  • 1 clove of garlic
  • 1 + 3 Tbsp olive oil
  • 3 Tbsp sweet soy sauce
  • Juice from a ¼ of a lemon

Accompaniment: pasta or our beetroot steak.

2 hours ahead of cooking, grate the zucchini (preferably in the kitchen robot), cut the tofu into small pieces and cut the garlic into small pieces. Mix together with 3 Tbsp of olive oil, the soy sauce and the lemon juice. Leave to marinate.

After 2 hours, heat a pan over high heat and pour in the mixture. Let cook for 20 minutes over medium heat. Mix regularly and take care to reduce it.

This marinade can also be used with eggplant as proposed in our recipe for Spaghetti squash on eggplant bed.
