Spaghetti Squash and its Crispy Seeds


For 2 people – very easy ~ €

Preparation time: 10 minutes

Cooking time in the pan: 5 minutes

Baking Time: 45 minutes


  • ½ spaghetti squash
  • 2 Tbsp olive oil
  • ½ tsp of cumin
  • ½ tsp pepper
  • 1 pinch of salt
  • The seeds from the spaghetti squash
  • Salt and pepper
  • 1Tbsp of soy cream

Accompaniment: couscous or pasta.

Cut the squash in 2. Recover the seeds and leave the stringy bits. Pour olive oil, cumin, pepper and salt into the squash and with a tsp, spread the mixture over the whole squash.

Place the squash in the oven for 45 minutes at 200°C.

Grill the seeds in a pan for 5 minutes over medium heat with salt and pepper. There is no need to clean them, the stringy bits will cook too.

Remove the squash from the oven and leave it for 5 minutes (this allows the flesh of the squash to come off more easily to form the spaghetti-like strings). Using a fork, scrape the sides of the squash lengthwise to prepare the spaghetti-like strings.

It is ready to taste the spaghetti served with a little soy cream.
