- 8 triangles of celery root
- ½ dl of breadcrumbs
- Margarine (vegan version and palm oil free)
Companion Version 1:
- Purée of green lentils
- Olive oil
- Garlic powder
Companion Version 2:
- Boiled potatoes, mashed potatoes or baked potatoes
With a sauce:
- 4 tbsp of soy cream or vegan cream
- 1 tbsp of capers
For version 2, start by mixing all the ingredients for the sauce and put it in the refrigerator.
Prepare the potatoes or cook the lentils.
Cut the celery root in half and cut each slice into 4 triangles of about ½ to 1 cm thick.
Cook the celery slices in salted water for 4 minutes. Put water in a bowl and put the breadcrumbs with the salt in another bowl. Dip the slices first in the water, then in breadcrumbs and fry in margarine for about 5 min on each side. You may need to put some margarine in the pan when you turn the slices.
Purée of vegan green lentils: cook the lentils, crush them with a fork, add a drizzle of olive oil, garlic powder and salt.
