Cooking time: 20 minutes
- ½ Romanesco (also known as Romanesque cauliflower or Romanesco broccoli)
- ½ cauliflower
- 5 medium size mushrooms
- 2 cloves of garlic
Soy cream (replaceable with 1 dl of soy cream)
- 80 ml soy milk
- 15 ml of olive oil
- 10 ml of sunflower oil
- 1 heaped tbsp of wheat flour (replaceable with 1 heaped tbsp of cornstarch for a gluten-free version)
- A couple of drops of vinegar (preferably cider)
Serve with rice.
Cut the Romanesco and the cauliflower into bite-size pieces. Boil them in water for 5 minutes.
Cut the mushroom into ½-cm slices. Fry the mushrooms and garlic in a pan for 5 minutes then add the precooked Romanesco and cauliflower. Let it cook for 5 minutes and add the cream. Leave to cook for another 5 minutes.
The Romanesco and cauliflower pieces should be kept intact. An overcooking will give you our result …!
