Hummus Waffle with Avocado Cream


For 2 people (2 waffles) – easy ~ €

Preparation time: 10 minutes

Cooking time: 4 minutes per waffle

Cooking time for sweet potato: 35 minutes


  • 1 large sweet potato
  • Oil and salt
  • 4 dl of hummus (one batch of our hummus recipe)
  • 2 Tbsp of flour (we used wheat flour)
  • Oil for the waffle iron (we used olive oil)
  • 1 avocado
  • ½ tsp lemon zest (optional)
  • 1 ½ tsp lemon juice
  • Tabasco or cayenne
  • Salt

Cut the sweet potato into slices of about 1 cm. Oil with a brush and salt lightly. Put in the oven at 200°C for about 35 minutes or until it is soft and coloured.

Empty the avocado and crush it with a fork. Zest the lemon, squeeze the juice and mix it with the avocado. Season with Tabasco and salt. Put in the fridge.

When about 15 minutes are left for the sweet potato, turn on the waffle iron. Mix the hummus with the flour. Oil the waffle iron before and between each waffle and bake each waffle for about 4 minutes.
