Potato Tapas with mustard & tarragon


For 2 people – easy ~ €

Preparation time: 5 + 5 minutes

Cooking time: about 30 minutes


  • 10 small new potatoes
  • 1 tsp old-fashioned mustard (with seeds)
  • 1 ½ Tbsp oil (rapeseed, olive, …)
  • 1 tsp tarragon (Estragon)

Put the oven at 200°C. Wash the potatoes and divide them in half without peeling. Oil them with a brush and put them in the oven. Turn them after about 15 minutes and let cook another 15 minutes, until they are soft inside and golden on the outside.

Meanwhile, mix the mustard with the tarragon and gradually add the oil to the mixture, as if to make a mayonnaise. Coat the potatoes with the mixture and serve.
