Cooking time: 30 + 10 minutes
- 150 g quinoa
- 1 average lawyer 1 medium-sized avocado
- 1 tbsp of wheat flour (replaceable with 1 heaped tbsp of cornstarch for a gluten-free version)
- ½ tsp of garlic powder (can be replaced with another spice)
- Salt & pepper
Serve with fries or potatoes with fresh spinach or salad
Boil water in a saucepan and pour the quinoa into the water. Leave to cook for 30 minutes (quinoa has to be overcooked before being able to form the croquettes). Drain the quinoa and let it cool a few minutes in a bowl.
Add flour, garlic, salt, and pepper and mix well.
While the quinoa cools, cut the avocado into quarters, then cut those quarters into 3 parts.
Put the quinoa in the palm of your hand, place a piece of avocado and cover with quinoa. Make 10 croquettes.
Heat the oil and fry in the quinoa croquettes 5 minutes on each side until brown.
We chose to serve our croquettes with sliced potatoes on a bed of fresh spinach.
