Preparation time: 10 minutes
Cooking time in the pan: 30 minutes
- 2 sweet potatoes (600 g)
- 100 g fresh spinach leaves
- ½ tsp of ginger powder
- ½ tsp of nutmeg
- 50 ml of coconut cream
Zero waste substitute for coconut cream:
- 150 ml of soy milk
- 15 g of coconut flakes
Clean the sweet potatoes with a brush. Cut into squares of about 1 cm. Cook them under a lid in a frying pan for 30 minutes on low heat.
Cut the spinach leaves into small pieces. Add after the sweet potatoes have cooked for 15 minutes.
To make the substitute for the coconut cream, mix the coconut chips with the soy milk by hand in a bowl.
Add the coconut cream (or its substitute), ginger powder, nutmeg and salt to the mixture just after adding the spinach. Cook it for 15 minutes while stirring it from time to time.
It’s ready to be eaten when the sweet potato is soft.
